Good news, everyone!

After months of tirelessly daydreaming about having my own home bakery, I filled my first order today!

Below are eighteen rainbow-layered cupcakes made for a young boy's classroom birthday party!




I'll be honest... I was super nervous the entire time I was making these. 
  1. This was my first time making cupcakes without liners... which was necessary to showcase the rainbow layers.
  2. I only had enough batter for eighteen cupcakes, exactly. I had hoped to make a few extras in the event that a few were unusable (because I dropped it on the ground or it got stuck in the pan or something), but then I didn't have enough batter to create a cushion.
  3. Because I didn't have any extra cupcakes, I couldn't do a taste-test to make sure the cupcakes weren't disgusting. Don't worry, though... I did lick the spatula (after I didn't need it anymore), and the batter tasted pretty good.
  4. I had a plane to catch in a few hours, so if anything went wrong, I wasn't even going to be able to start over. 
Fortunately, all of my fears were unfounded. The cupcakes came out looking great, albeit not as cleanly layered as they could have been (which frankly, I think just makes them more fun). 

I packed my suitcase while they cooled, then packed the cupcakes up, all professional-like. Well, somewhat professional like. Well, they were packed up within the guidelines of the Texas Cottage Food Law... and I'll get better about making the presentation look nice in the future.

Now, I'm in New York relishing a job well done and sitting in my hotel planning out how to decorate the next order... Santas and reindeer.
